I'm curious what exactly people are leveraging their nest protects for outside of just monitoring their status?

Not much! I'm new to this but I don't think there is a way to get beyond just the basics of protection.
I'd love to access their motion detection capabilities and I understand there is a temp sensor in the device

You're right but there's no access in the API at the moment because the NEST Protect only calls home a couple of times a day. However - when the latest version of the NEST API is released soon there will be an opportunity to access the NEST products directly and, hopefully, gain access to the motion and temperature sensor.
