I moved my stuff to mac minis some time ago (2018 client w 3 Displays, and 2020 m1 indigo server) everything works fine.
I still have an old mac pro 2012 tower with lots of ram and 16TB disk space.
The mac software is outdated and no updates are available anymore.
I was considering putting ubuntu on it, but I don't know what to with it besides heating my room (250W)
Ay suggestions?

If it were me, I'd put it out to pasture. Never mind the lack of updated security, at 250w, I'd send it packing.
