Nonlisted I2C sensor devices

What happens if you have a similar but unlisted I2C device you want to add to a Pi? I have found an underwater version of the -i2cT5403 Temperature+Pressure sensor that I'd like to use to monitor the depth of water in a cistern http://www.mouser.com/ProductDetail/TE-Connectivity/MS583730BA01-50/?qs=SvmF4ZFxmIz%2f53mFym%252bZPQ%3d%3d... If it's just a calibration factor on the pressure, I'll be converting from mBar to depth anyway, so that's not a problem, but if you've got consistency checks in there to insure the model number is correct, would it be possible for me to hack your source to either add or replace the parameters for it?
